You can record RS while in fullscreen using Quicktime, you don't need to change it to windowed mode.  Just open Quicktime, select "New Screen Recording" and then hit record.

If you open RS first, and then go back to the desktop before running Quicktime you can start recording and then go back into RS without having to record the opening title sequence.

HOWEVER, you won't get the result  you're looking for.  Unfortunately you can't record the computer audio using Quicktime in Screen recording mode.  This is a limitation imposed by Apple to hamper piracy.

If you click the little arrow beside the record button in Quicktime you'll see that you can choose the Real tone cable as an audio input under the Microphone settings, and you can record that, but you won't get any of the in-game audio or any of the effects applied to your guitar/bass in the game.  All you'll get is a clean sound from your guitar/bass.

Check out a program called ScreenFlow.  It's great for recording both the screen and audio on Mac and works really well.  There are lots of other programs available for recording on Mac, but I like ScreenFlow the best.  It allows you to record not only your desktop apps, but also from the FaceTime camera as well, all at the same time.
