Newbie Question: Why Do People Make NDD Versions?

I was curious why there are non dynamic difficulty versions and versions with DD. What does leaving DD out get you?

I searched around the forums and looked at at FAQ that I found, but I didn't see anything that addressed this. Sorry if it's been asked a million times before.

Before the remastered version you couldn't just turn off DD for all songs by default and had to do it for manually every song you wanted to play in riff repeater, so people made no DD versions so you didn't have to.

Now they just cause issues in game like broken play counters and stuff which is why all new songs need DD.
